Ras El Hanout Spice
Blend No.12 Ras El Hanout - Common in North Africa, it features heavily in Moroccan cuisine. There is no definitive list of ingredients that make up this spice but there are some commonly used spices that appear more often than not. Our blend has been developed over time so that we could use it as both a BBQ rub and to cook tasty dishes.
The BBQ rub works well with a wide variety of meats, fish and vegetarian meat substitutes and we would encourage you to experiment. As with many highly flavoured mixes, it is best accompanied by plain side dishes such as couscous or rice and we have also found a fresh squeeze of lemon juice really lifts the dish.

Berbere Spice
Berbere Spice Blend No.11 - The backbone of Ethiopian Cuisine, a complex flavour that is very versatile. It uses many spices to make this blend. Its many layers of flavour make for a complex aromatic mix that is unique.
As a BBQ rub it is certainly very different and it works well. Serve it with a simple bean salad or lentils.
Its earthy aromatic flavours were designed for slow cooking and as such we decided to do a recipe that makes an easy and quick stew that tastes fantastic. It will give you a good idea of how wonderful this blend works if you decided to slow cook a bigger piece of meat and allow the flavours to develop even more.

Paella Blend
Paella Blend No.15 – Often associated with using a wide range of seafood it is a dish that some shy away from, fearing the “nuts & bolts” of shellfish. It was however originally not cooked with seafood and it is a versatile dish that has more versions than there are cooks cooking it.. Whilst many assume it’s a national Spanish dish it actually originates from a regional Valencian dish. Paella translates into a pan, so it is a dish cooked in a pan, commonly a shallow pan with two handles but any decent-sized saucepan will suffice.
Our blend will help you create a wonderful authentic flavour quickly and easily, and once you’ve tried our standard recipe you will be able to incorporate different vegetables, meats and seafood to make your own favourite version. As long as you’ve got the basics spices right there is no right or wrong paella, only the one you love the most.
It’s such a simple dish to make and packed full of flavour, if you’ve never tried it before give it a go and if you’re not too sure about any of the ingredients we use in our recipe simply change them to ones you do.

Tagine Spice
Tagine Blend No.19 - Synonymous with Morocco, the Tagine is used throughout the Middle East and North Africa. The name tagine relates to the cone-shaped cooking pot used to cook food slowly, the pot traps the steam created by the cooking process which then drops back into the stew. Ideal for regions where water is scarce the slow cook intensifies the flavours whilst making the meats tender.
Our spice blend will give you that authentic flavour and will work just as well with a slow cooker, a heavy or cast-iron pot if you do not have a Tagine. Mouth watering and easy to prepare it can slowly cook in the oven making it a wonderful meal to come home to on a workday. Preparation is quick and you can either do it in the morning or the evening before, just leave it in the fridge overnight.

Swedish Meatballs Blend
Swedish Meatballs Blend No.21 – Possibly one of Sweden’s most iconic foods they are a wonderful comfort meal that is quick and simple to make. Meatballs are used the world over and are more commonly known as Kofta’s which refers to meat that has been minced and formed into balls or placed on a skewer.
It is believed that the Swedish version originated in Turkey, but this is no real surprise as many foods have unexpected origins. The world has been trading for hundreds if not thousands of years. The Swedish meatballs have their own blend of spices and tend to be not too big. They are traditionally eaten with gravy and mashed potato.

Italian Bolognese Blend
Italian Bolognese Blend No.14 – A sauce that needs no introduction, we’re all familiar with it. So why would we offer this blend when it’s so easily purchased? Good question but the answer is very simple, ours is made with just spices and herbs, no additives no caking agents just flavour. It’s been widely published about a certain famous jar containing 10 teaspoons of sugar and we all know that salt is used heavily to balance out the flavour to stop it from tasting too sweet.
Packet mixes are just that full of additives and anti-caking agents which you just don’t need. It’s just madness, if you use a good blend such as ours and add some chopped vegetables and tinned tomatoes you’ll end up with a sauce that does not only taste better it will be far healthier. A good Bolognese is so simple to make we just had to perfect a blend for you to use that’s quick and easy.
As always ours can also be used as a rub as it’s just herbs and spices. Use it with salmon which works well with the Bolognese herbs and tomato undertones.
Chimichurri Spice
Chimichurri No.13 - Has its roots in South America but its origins are probably Basque and loosely translate as “a mixture of things in no particular order. It’s blend is deceptively simple and can be used as a dry rub or used within a dish to replicate the original sauce. It has a beautiful delicate taste that when used as a dry rub enhances the flavour of any meat. It is subtle and yet full of flavour.

Our Kofta blend is based on Greek flavourings which they would traditionally serve in kebab houses, accompanied by Tzatziki or plain yoghurt. They are easy to prepare and can be cooked in several ways, if it's not bbq weather no problem these work well under a grill or simply frying them.

Japanese 7 Spice
Japanese 7 Spice Blend No. 16 – Also known as Shichimi Togarashi, dates back to at least the 17th Century and is traditionally used to flavour soups, noodles and grilled meats.
As well as being flavoursome, it is hot too and whilst we normally tone down the heat in our blends we felt it really needed to be balanced with enough heat to make it more in line with its heritage.
Don’t worry it won’t blow your head off but sit rather as an undertone in the background which really lifts the ingredients of this spice blend. Whilst it does work with many meats it does seem to work particularly well with fish on the BBQ.
Used with noodles it can take your mid week quick dish to another level, Dave will often cook chicken noodles on a night when the kids are disappearing off here there and everywhere, as it can be whipped up in as little as 15 to 20 minutes.

Merguez Spice
Blend No.8 Merguez - Has its roots in North West Africa, popular in both the Middle East & Europe. Sometimes found in sausages, as a flavour, it has got a beautiful aromatic quality that we felt can work as a rub or as a meal maker.
Try it as a BBQ rub and we are sure you will agree, it is just too good to be limited to a sausage, although they taste great too. It has a well-rounded flavour and we like to serve it with roasted vegetables or on potato wedges.
As the main dish, we think we have got a winner here. Follow our recipe card to create a hearty stew in record time that is packed full of flavour and is full of goodness. We would suggest serving it with couscous.

Korma Curry Spice
Blend No.10 Korma - Has its roots in the Indian subcontinent, it has a mild and fragrant flavour. A rich dish that was made to impress using ingredients that were expensive back in the day.
As a curry it has always been a popular dish and quite rightly. Not all curries are supposed to be hot, they are about flavour and a korma has plenty of that. This recipe moves away from the sweet dishes we are used to and gets back to grass roots. Try it for yourself and see how it should taste. Serve with a vegetable or mushroom pilau rice and warm naan.
This has also turned into a fantastic blend to use at a BBQ or grilled. Eat it straight off the grill with paratha bread and mint yoghurt.
